Greystone is the name of the restaurant at Napa’s Culinary Institute of America.  The top notch Napa winery next door, Markham, makes this special bottling for them.  A little bit is released to the public and we are glad to have this opportunity to drink them, especially at a Deal price!

The Culinary Institute of America at Greystone is the California campus of the prestigious Culinary Institute of America (CIA). The CIA at Greystone is located in the Napa Valley town of St. Helena and occupies a historic stone-walled mansion that was once the Christian Brothers Winery.

Red WineGreystone Cellars Cabernet Sauvignon 2009

Dark garnet color.  Aromas of tart cherries, caramel and coffee swirl in the glass.  Spicy flavors of black pepper and cinnamon are tightly woven through the Bing cherry core. Tight tannins give this wine great structure and a rich mouthfeel of Cabernet.

14 Months Barrel Aged ~ 26% New American Oak

This is a fantastic, varietally correct Cabernet made by a top notch Napa Valley producer for the Culinary Institute of America’s Greystone restaurant. Smooth, luscious, all the fruit and some vanilla and light toast from a judiciuos barrel program.

Who makes it? Markham! They’ve been in Napa since 1978 doing it right, and they’re next door to the CIA. I think this is worth buying in the case lot, definitely. We have a limited number of cases on hand, and access to a few more.

Red WineGreystone Cellars Merlot 2009
(Napa, California)

Vineyards in the “heartland” of California gives our Merlot plenty of ripe cherry character. Careful canopy management is key to farming in the Lodi, Sacramento Delta and San Joaquin areas. Cool nighttime temperatures were the hallmark of this vintage, allowing our red varietals to maintain perfect acid structure in conjunction with extended ripening time, concentrating optimal flavors in the small berries. This wine is great to enjoy with burgers on the grill.

In this ruby red wine, the black cherry and chocolate aromas are layered with vanilla, briars and smoke. The fleshy texture is harmonious with plum and raspberry flavors.  Cherry and plum aromas are layered with spice, smoke and even floral highlights.  A lush juicy plum texture combined with cola, cranberry and black tea notes on the palate.  The grip of tannin on the finish is pleasant and easy-to-drink.

12 months Barrel Aged, with 20% New American Oak

Smooth, fruity, soft, and easy to drink. This Merlot sincerely over-delivers for the price tag, and especially so at the deep discount. Black cherry and chocolate aromas are layered with vanilla, briars and smoke. The fleshy texture is harmonious with plum and raspberry flavors.

White WineGreystone Cellars Chardonnay 2010

The Chardonnay vineyard sites were specifically chosen for their tropical nature. Cool Santa Barbara grown grapes provide crisp, citrus texture. The Lodi grown grapes give this wine rich and juicy tropical flair. The unusually cool California summer allowed for maximum flavor development for this vintage. The warmer area grapes were harvested mid-September, whereas the coastal fruit languished in the fall weather until early October. This wine would pair very well with grilled tuna or chicken.

Golden yellow color. Aromas of peach and pineapple.  Mineral and vanilla cream notes stay balanced against the lemon-lime and green apple flavors.

Sur-Lie Aged on Oak for 4 months. 25% Malolactic.

Chardonnay drinker’s take notice! This has good oak aging on it, not over-the-top, but sufficient to produce a nice creamy toasty aroma, smoothe mouthfeel, and vanilla/butter on the palate. For the price it’s an absolute steal in Chardonnay.  One wine writer said “Surprisingly rich and complex for the price. ” If you like it, pick up a case or two!
