Happy Thanksgiving from Enoteca
Man oh man, where has November gone? Next week is Thanksgiving already, and my family is calling daily to
reconfirm the holiday menu. Of course Russell and I are in charge of bringing drinks while my Mom cooks the
turkey and makes the best yams ever!
What beverages am I bringing? Glad you asked. Over the past few years Russell and I have discovered tried and true wine and beer selections to compliment the many flavors of the big dinner. First, Pasek Cellars Cranberry wine is the all around crowd pleaser, connoisseur and novice alike love it. Next, if there was one white and one red to bring to the dinner table I recommend Riesling and Pinot Noir. My favorite “show stopper” Pinot Noir is Belle Glos, made by Chuck Wagner of Caymus. For the top-of-the-line Riesling, J.J. Prum is the mack daddy. For local Washington State choices, seek out Pacific Rim Riesling and Okanogan Pinot Noir.
Those choices are just for the actual dinner, when it comes to the noshing before hand my family and I are
going to have Moscato di Asti (Tre Donne or Ceretto preferred) with a dash of cranberry juice. It’s crisp,
pretty in pink, and incredibly festive!
With the pumpkin or pecan pie course I suggest a Tawny Port or a French Sauternes. Sauternes in my opinion is one of the finest little dessert wines to enjoy. It’s different than the Ice wine or Late Harvest because of it’s balance of sweetness and acidity.

This 2006 Columbia Valley Riesling offers the trademark heady aromatics of tangerine, apricots and zesty citrus. White peach, sweet pear and ripe melon flavors are followed by a racy acidity that creates a sensation of almost dryness on the palate even though a small amount of sugar remains in the wine.

Largely from the outstanding vintages of 2005 and 2006, this wine is very dark in nature with slightly more structure than previous Lot wines. The wine shows a bit of dustiness coupled with resin, cedar, spice, dark chocolate and black cherry aromas. On the palate the wine enters sweet with a broad mid palate and ramps up quickly with flavors of bittersweet chocolate, cola, brambly blackberries, tobacco and subtle earthy black tea notes. The finish is long and muscular and with time will age beautifully given the concentration and power of the fruit coupled with the natural acidity and tannins in the wine. Best from 2010 – 2015.

This Merlot displays our signature chocolate, espresso, bright cherry and clove aromatics. The wine enters the palate with sweet plum and cherry flavors and transitions seamlessly into a mid-palate that is broad and viscous. The wine finishes with hints of vanilla and allspice followed by ripe, sweet tannins that linger for nearly one full minute.

Our 2003 Cabernet Sauvignon is more reminiscent of our outstanding 2001 vintage in terms of its refinement, femininity and elegance. Aromatically the wine shows a sweet, toasty spiciness, saturated in graphite and red fruits. On the palate, the wine enters with sweet red and black cherries, shows medium weight in the mid-palate coupled with hints of candied cassis, leather, tobacco and allspice. The wine has a long finish with firm tannins that will easily resolve themselves in the years to come allowing for mid to long term enjoyment. Best 2008 - 2015.

Thanksgiving Beers Suggestions at Enoteca Fine Wine and Beer
Thanksgiving is a great holiday, it makes me think of the Puritans. The Puritans loaded more beer than
water onto the Mayflower before they cast off for the New World. They had their priorities. We have a
wider selection available to us, and I’d like to share some of my favorite Thanksgiving beers.
For breakfast on Thanksgiving day, start with Lagunitas Cappuccino Stout or Meantime Coffee Porter.
As a great before-dinner aperitif, a Trappist brew like Orval is the perfect warm up. With the actual food, the amazing combination of a wheat, barley, and oat beer found in Tripel Karmeliet is the perfect medium-full body with just enough sweetness to compliment everything on your plate from candied yams (thanks to my mother-in-law) to the turkey and gravy. The other excellent brew for the meal is Kwak, it’s just sooo good.
One of several Oktoberfest or Marzen beers, such as Alpine, Ayinger, or Paulaner are the best brews for pie time. For the final beer of the night, go for one of the Chocolate beers such as Ommegang Chocolate Indulgence or Stone Bitter Chocolate Oatmeal Stout, not to mention Rogue and Youngs, or even no-chocolate-added beers that imply a chocolatey flavor like Mikkeller Santa’s Little Helper 2007 and Ayinger Altbarisch Dunkel. We call this a chocolate night cap.

Last month and this month offer a “double shot” of coffee infused beer. Pours a deep brown with a good off-white head. Aromas of coffee and cocoa come through strongly, balanced by a creamy texture with some hop action in the mid-palate. Perfect for breakfast.

The Meantime Brewing Co. loves flavour, so it wasn’t exactly difficult for them to see how the scents and aromas of coffee and barley would create a perfect match like mint and lamb, toffee and banana, peaches and cream, peanut butter and jam. Serve lightly chilled with as many chocolate truffles as your conscience allows. Each serving is equal to one cup of coffee. The natural flavours of the beans selected and hand roasted by the Union Coffee Roasters go well with the roast barley in the beer to give a silky-smooth drink with distinct chocolate and vanilla notes. 2006 World Beer Cup Gold Medal 6% ABV. 330ml bottle

Adding to our collection of Trappist Monk Beers this month is Orval. Sunset-orange color; a fruity and slightly acidic bouquet, firm body, profound hop bitterness, and long, dry finish. Serve with mild semisoft cheese, warm brown bread, fresh pears, steamed mussels, clams in Pernod cream sauce, oysters, smoked salmon and trout, and calamari. Traditionally served in Orval balloon glasses (coming soon) to capture the big bouquet and lovely “Belgian Lace.” Excellent with a handmade cigar. Serve at 55° to 60°.

Pauwel Kwak (pronounced /POW-ell kwok/), or simply Kwak, is the name of a Belgian beer, named after its original brewer, Pauwel Kwak, who first brewed it in 1791. It is now made in the family-owned Brewery Bosteels in Buggenhout, Belgium.
The most famous aspect of Kwak is the eye-catching glass in which it is supposed to be served. Kwak has a round-bottomed glass that resembles a ‘yard of ale’, which is held upright in a wooden stand—rather like a piece of old scientific apparatus. The glass apparently originated in the days of the stagecoach. Travelers would often stop at an inn for refreshment, but the coachmen were required to stay with the coach and horses. Standard handled mugs were impractical for gloved coachmen sitting high up, so one enterprising innkeeper, Pauwel Kwak, had a special glass created for his beer. Its shape enabled it to be hung on the coach and be easily held in a thick glove. Be careful, the unwary often try to gulp the beer, failing to notice that the shape permits a torrent to pour out when the air reaches the bowl. This unique glassware, with its wooden stand, is available at Enoteca for $9.99 each.
This beer is a full-bodied Belgian Dubbel. Amber in color with beautiful foam and slightly sweet, seductive malt character. Russell cracked one for Thanksgiving and enjoyed the rich, satisfying Belgian experience. 8% ABV.

Bavarians have been celebrating the harvest with beer festivals since before the 1400s. Märzen is brewed in March to be ready for the September and October beer festivals.
Rich, golden color. Slightly sweet, malty nose. Medium to big body and alcohol. Soft dryness from long maturation.
Serve with Tellerfleisch (boiled beef), pretzels and radishes, goulash with dumplings, clam chowder, bock-wurst, weiner schnitzel. Traditionally served in tall earthenware or glass mugs.

Our Anniversary Ale this year stems from 2 pilot beers that were brewed by members of Team Stone. The first was Jeremy Moynier’s incredibly delicious Oatmeal Stout, and the second was Jake Ratzke’s amazing homebrewed Imperial Stout that had authentic Oaxacan chocolate added to the boil. We loved both beers so much that we decided to combine the recipes to make this year’s Anniversary offering: Stone 12th Anniversary Bitter Chocolate Oatmeal Stout. This beer pours deep black with a rich brown head of foam. The aroma is dominated by roast malt and cocoa. Upon tasting, the cocoa (we used unsweetened, unprocessed cacao sourced through our friends at Chuao Chocolatier) really comes through with a deep chocolate flavor and a long lasting bitter finish. The roasted grains used add coffee and licorice accents. It is a thick beer, but not sweet, with the addition of oatmeal in the mash providing a rich, silky mouthfeel that adds to the creamy texture.Grains used: Pale Malt, Carmel Malts, Oats, Black Malt, Roasted Barley, Chocolate Malt and 100% Pure Cocoa
Hops used: Ahtanum, Summit, Willamette and Galena

Santa’s Little Helper is an 11% ABV vintage dated Belgian Dark Strong. Sarah and I shared this one this week. Wow, this is packed with frothy malty goodness, and notes of chocolate, mocha, cocoa, mole, and chocolate. Did I mention that it has a certain chocolatey quality. The packaging is distinctly Christmasy, this would make a lovely gift for the beer lover, or the chocolate lovin’ lady who is a beer skeptic.
