Barrister Winery Wine Tasting
Start the weekend out right at Enoteca - Fine Wine & Beer! This
Friday from 4-7 Enoteca will be hosting Michael White, winemaker of Barrister Winery, as he shares a selection of his Spokane-made wines. We will be tasting
Saturday from 12-7 as well. Taste a flight (2 oz. each of 4 wines) for $10 per flight, and follow up for $10 per glass.
Sauvignon Blanc 2006 (Klipsun Vineyard, Red Mountain, Washington) - Klipsun has been rated as one of the top 25 vineyards in the World. If you like New Zealand style Sauvignon Blanc this is a wine for you. The wine was fermented in stainless steel with a special yeast developed in Spain for grapes grown in hot climates.
100% Sauvignon Blanc

Merlot 2005 (Columbia Valley, Washington) - This is a serious Merlot! Blended with 6% Cabernet Sauvignon from the Pepper Bridge, Seven Hills and Bacchus vineyards to give structure and 7% Cabernet Franc to add a touch of softness. This wine is drinking well now but will continue to develop and reveal layers of black cherry with a hint of chocolate wrapped in our signature sweet toasted oak.

Cabernet Franc 2005 (Columbia Valley, Washington) -
Taste this sold-out vintage, and when we’re out of it, pre-order bottles for the next vintage, due out soon. Another gorgeous Cab Franc from the magical Chelle den Pleasant and Sagemoor’s Wienbau Vineyards blended with a touch of Cabernet Sauvignon from Pepperbridge, Seven Hills, and Bacchus vineyards. The wine has soft tannins, a rich berry nose wrapped in layers of toast, mouth-filling flavors and a long, long finish.

The Syrah is blended with just a touch of Cabernet Sauvignon from old vines Bacchus Cabernet Sauvignon. The wines has a nose of dark fruits and sweet toast.

Bock Bock Bock Chicken - Beer Recipe
This week Sarah cooked a great meal for Russell. It’s called
Bock Bock Bock Chicken and includes a healthy dose of Bock or Dopplebock style beer. Here’s the recipe followed by some suggestions of beers that qualify and can be found at Enoteca. One for the chicken, one for the chef.
Who can resist a chicken recipe that clucks? Everyone seems to like the funny name of this dish. The Bock beer and blackberry jam really give a rich flavor to this chicken.
Ingredients:
- 2 cups fresh mushrooms, sliced
- 1 tablespoon butter
- 1 pound skinless, boneless chicken breasts cut into bite size pieces
- 1/2 pound fresh snow peas
- 8 ounces (1 cup) Bock or Dopplebock beer
- 1/4 cup blackberry jam
- 1/4 teaspoon salt
- 1/4 teaspoon cracked black pepper
- 1/2 teaspoon thyme
- 1/2 teaspoon ground sage
In a large skillet melt the butter over medium heat. Add the mushrooms and saute over medium heat for 5 minutes. Remove the mushrooms from the skillet and set them aside. Add the cut up chicken to the skillet. Cook the chicken over medium heat for 10 minutes, or until the meat is cooked through. Stir in the Bock or Dopplebock beer and snow peas. Cook for 5 minutes on medium heat. Stir in the cooked mushrooms, blackberry jam, salt, cracked black pepper, thyme, and sage. Simmer on low heat for 10 minutes. Serve over a bed of wild rice, and with a good beer.

Ayinger Celebrator Doppelbock (Germany) - Profoundly dark, rich elixir with a complex fruitiness of roasted malt and whole hop flowers. Semi-dry finish. 4 pack 11.2 oz. bottles available.

Flying Dog Wild Dog “Collaborator” Doppelbock (Colorado) - Collaborator Doppelbock was created through Flying Dog’s Open Source Beer Project, which gave amateur brewers a chance to give the brewing team recommendations and feedback on the everything from the grain, hops and yeast to the brewing process itself. 25.4 oz. bottles available.

Fish Tale Detonator Doppelbock (Cascadia) - Oak-aged Doppelbock is a full-bodied lager with a deep reddish-brown color. It’s brewed it in the classic German tradition, with noble Hallertauer and Columbus hops added to Pale and Chocolate malts and a large portion of Munich malt. As a result, Detonator offers a malty aroma and palate, which is balanced by its relatively dry finish, plus the subtly melded character of the robust ales and fine Merlot which previously filled the oak. 12 oz. bottles available.

Rogue Dead Guy Maibock (Oregon) - Dead Guy is a German-style Maibock made with Rogues proprietary “PacMan” ale yeast. It is deep honey in color with a malty aroma, rich hearty flavor and a well balanced finish. 22 oz. bottles and 64 oz. growlers available.

Friday, February 22nd - 4-7 pm - Barrister Winery with wine maker! Barrister Winery of Spokane is making some of the area’s most sought after top notch wines. Michael White will be on hand to show off his wine and sign bottles. Come meet one the attorney/wine maker on Friday February 22nd, and taste a great selection of their wines! We will taste these wines on Saturday, February 23rd as well, from 12-7.
Friday, February 29th - 4-7 pm - Washington State wines with Michael Wiley. Check out the excellent quality coming from our own back yard. A variety of wineries will be represented to give a good “taste” of Washington. We will taste these wines on Saturday, March 1st as well, from 12-7.
Friday, March 7th - 4-7 pm - Taste of Club! March Wine & Beer of the Month Club! Club tasting event, taste all the wine club wines! This is a great opportunity to see what the Club is all about, and to see what others are getting in their bins. We will taste these wines on Saturday, March 8th as well, from 12-7.
Thursday, March 13th - 6 pm - Port Tasting! Enoteca will be hosting Kevin Olsonberg as he pours a lineup of excellent port wines, fortified wines that are sweet and convey complex flavors. More information to follow in this newsletter.
Wednesday, March 19th - 6 pm - Laughing Dog Beer Tasting! Enoteca will be hosting Brewmaster Fred Colby of Laughing Dog of Sandpoint as he pours a lineup of excellent beer. Only $10 per person, register in advance.
